Tasty Tuesday

Chicken Parmesan

4 chicken breasts
1 egg, lightly beaten
1/2 c. Italian breadcrumbs
2 T. butter, melted
1 3/4 c. spaghetti sauce
1/2 c. mozzarella cheese
1 T. grated parmesan
1/4 c. parsley
1 pkg. thin spaghetti noodles

Flatten chicken into 1/4" thickness with meat mallet. Dip chicken in egg, then bread crumbs. Cook in butter in electric skillet over medium-high heat until brown on both sized. Spoon spaghetti sauce over chicken. Bring to a boil Cover. Reduce heat & simmer 10 minutes. Sprinkle with cheese & parsley. Cover & simmer until cheese melts. Serve over noodles, cooked according to package.

Cool Whip
Sweetened Condensed Milk
1/2 c. lime juice
Graham cracker Crust

Mix cool whip, milk & juice together. Pour into crust. Refrigerate.

Tasty Tuesday

Smothered Chicken Enchilada's

8 oz. sour cream
2 cans cream of chicken soup
1 chicken, boiled, deboned & shredded
1-2 pkg. taco seasoning
corn tortillas
cheese (your choice)

Cook chicken in taco seasoning, as directed. Roll into corn tortillas and place in 9x13" dish. Mix sour cream & soup. Pour over top. Spread cheese over top. Bake 350* 45 minutes or until hot.

Chocolate Chip Cheeseball

8 oz. cream cheese, softened
1/2 c. butter, softened
1/4 t. vanilla
3/4 c. powdered sugar
2 T. brown sugar
3/4 c. mini chocolate chips
3/4 c. pecans, finely chopped

Beat cream cheese, butter & vanilla until fluffy. Gradually add sugars. Beat just until combined. Stir in choclate chips. Cover & refrigerate 2 hours.  Place on large piece plastic wrap, shape into ball. Refrigerate 1 hour. Roll into pecans when serving. Serve with Graham Crackers.

Cheesy Chicken

2 (12.5 oz) cans chicken
2 (8 oz) crescent rolls
2 cans cream of chicken soup
2 c. milk
1 c. grated cheddar cheese
1 can green chilies (opt, I usually leave them out, but my mom always put them in when I was growing up)

Separate crescents. Place chicken on each. Roll up. Place in 9x13" dish. Bake 375* 15 minutes, or until browned. Meanwhile, mix remaining ingredients (1/2 the cheese). Pour over crescents. Put remaining cheese on top. Bake 20-25 minutes longer, until hot.

Honey Bun Cake

Mix together:
1 box yellow cake mix
4 eggs
2/3 c. oil
8 oz sour cream
Pour half of mixture into 9x13" dish.

Mix together:
1 c. brown sugar
3 T. cinnamon
Pour on top of mixture. Add remaining batter. Cut through mixture with knife. Bake 325* 40 minutes.

While cake is hot punch holes in it, and pour over:
3 c. powdered sugar
1/2 c. milk
2 t. vanilla

Stuffed Shells

1/2 box jumbo shell pasta
24 oz. small curd cottage cheese
1 c. shredded mozzarella
1 c. shredded provolone
1/4 c. grated parmesan
1 egg
1 box frozen spinach, thawed & drained - squeeze dry until there's no water left
1 jar spaghetti sauce
1 lb. Italian sausage, broened and drained

Cook pasta according to pkg. directions. Drain & allow to cool. Combine egg, cottage cheese, parmesan & 1/2 of combined cheeses. Stir in spinach and sausage.  Fill each slell with a large spoonfull of mixture. Place in 9x13" dish. Pour spaghetti sauce over pasta. Cover with remianing cheese. Bake 350* 25-30 minutes.

Breakfast Dish

1/2 loaf French bread, buttered & cubed
1 lb. sausage, browned and drained
1 1/2 c. cheese
5 eggs
1 pint half & half
1 t. salt
1 t. dry mustard

Place bread in bottom of 9x13" dish. Spread sausage over top. Then spread cheese. Mix remaining ingredients, pour on top. Chill overnight. Bake 350* 40-45 minutes.

1 3/4 c. sugar
1/2 c. self rising flour
6 T. cocoa
2 1/2 c. milk
1/2 c. water
2 t. vanilla

Cook in microwave until done. Pour over biscuits.

Spicy Saltines

1 lb. box saltines
1 pkg. dry ranch dressing mix
1 1/3 vegetable oil
2-4 T red pepper flakes, depending on how spicy you want it.

Pour saltines in large bowl with a good fitting lid. Mix all other ingredients. Pour over saltines. Mix well, but gently. Flip bowl over every 15 minutes for about an hour.

Chocolate Chip Cake

1 box cake mix (German or Swiss)
8 oz sour cream
3/4 c. warm water
1 t. vanilla
4 oz. chocolate instant pudding.
1 c. oil
4 eggs

Mix well for 2-3 minutes. Add 1 1/2 - 2 cups chocolate chips. Put in bundt pan. Bake 375* 55 minutes.

Mix together;
8 oz. cream cheese, room temperature
8 oz sour cream
2 c. grated cheddar cheese
1 can green chilies
1/4 c. green onions, chopped
1 t. garlic salt
ham, diced

Spread onto 1 pkg. flour tortillas. Roll up. Cut into circles.

Laura Bush Cookies
**This makes a LOT, so use a big bowl while mixing**

3 c. flour
1 T. baking powder
1 T.cinnamon
1 T. salt
3 sticks butter, at room temperature
1 1/2 c. sugar
1 1/2 c. packed brown sugar
3 eggs
1 T. vanilla
3 c. semi-sweet chocolate chips
3 c. oats
2 c. coconut flakes
2 c. pecans, chopped

Cream butter & sugar. Add eggs and vanilla. Beat. Add dry ingredients until well blended. Bake 350* 10-12 minutes.

Chicken Cordon Bleu

4 lg. chicken breasts
2 T. butter, softened
1 t. dried thyme
4 thin slices cooked ham
4 thin slices swiss cheese
8 bacon strops
2 eggs
1/2 c. milk
1/2 c. flour
3/4 c. dried bread crumbs
1/2 t. garlic powder
1 t. dried oregano
1/4 c. shredded parmesan cheese

Flatten chicken breasts; spread butter on the insides. Sprinkle with thyme. Top with slice of ham & cheese. Roll up tightly. Wrap each with 2 slices bacon and secure with toothpicks. In a small bowl, beat eggs and milk; set aside. Place flour in another bowl. Combine crumbs, garlic powder, oregano & cheese. Dip each breast into egg mixture, then flour, then egg mixture again, then into crumbs. Place on greased baking sheet.

Bake 3* 40-45 minutes.

Earthquake Cookies

Devils Food Cake Mix
2 eggs
1/2 c. shortening
1 T water
3/4 c. powdered sugar

Mix with spoon, except sugar. Chill 1 hour. Shape into dough balls. Roll in powdered sugar. Place on ungreased cookie sheet.

Bake 375* 8-10 minutes.

Chicken Bruchetta

6 chicken breasts, tenderized
1 box chicken stuffing
15 oz can crushed tomatoes
1 t. minced garlic
basil
mozzarella cheese

Cut foil in 6 pieces. Spray with cooking spray. In bow, mix stuffing, tomatoes & garlic. Place chicken on foil. Sprinkle with basil. Put stuffing mixture on top. Sprinkle with cheese. Fold foil packets up and place on cookie sheet. Bake 0* 35 minutes.

Crescent Cheesecake

2 cans crescent rolls
2 (8 oz) cream cheese, softened
1 egg yolk
1 c. sugar
1 t vanilla
1 t. lemon juice

Unroll 1 can crescents. Place in 9x13" dish. Push up sides to form crust. Beat together cream cheese, yolks, sugar, vanilla & juice until smooth. Spread over dough. Unroll 2nd can crescents and put on top mixture. Pinch together. Bake 350* 20 mins, until brown.

Top with icing, while still warm:
1 c. powdered sugar, little hot water, 2 drops vanilla

Poppy Seed Chicken

2-3 chicken breasts, boiled & cut into small pieces
16 oz. sour cream
2 c. cream of chicken soup
2 T poppyseeds
ritz crackers, crushed
1 stick butter, melted

Mix first 4 ingredients. Put in 9x13" dish. Cover with crackers, pour butter on top. Bake 350* 20-30 mins.

Chocolate Eclair Cake

1 box graham crackers
1 box instant french vanilla pudding mix
8 oz cool whip

In bow, mix pudding as directed. Stir in cool whip. Layer as follows in dish:
1) Graham Crackers
2) 1/2 Pudding Mix
3) Graham Crackers
4) Rest of Pudding Mix
5) Graham Crackers

Frosting:
In Saucepan, melt:
3 T butter
3 semi-sweet chocolate squares.

Remove from heat, add:
1 t. vanilla
1 1/2 c. powdered sugar
1/4 c. milk (a little extra, if needed)

Mix and spread over top. Chill.

Taco Soup

Brown & Drain:
1 lb. hamburger
1 large onion

Add:
3 cans chili beans
1 can corn
1 can diced tomatoes
1 can tomato sauce
1 can chopped green chilies
1 pkg. taco seasoning
1 envelope Ranch Dressing Mix
1 1/2 c. water

Let come to a boil, simmer until hot. I usually serve this with cheese, sour cream and tortilla chips

New Years Resolutions?

So, I've never been one to make New Years Resolutions. They are so easy to make but forget about on January 3rd. But this year, I am DETERMINED to stick with it! I've joined a fitness center, I've gone now 5 days and I'm LOVING it! It helps so much that this time I have fitness buddies...near and far! I've joined an awesome Facebook group that keep you motivated, give you meal ideas, and are there to help pick you up when you fall. I'm so thankful for each of those gals! Just a shout out to a few of them: Amy, my sweet sister-in-law, thanks for going to the gym with me! It will be so fun to have someone on this journey right by my side...and watching the pounds fall off each other, and the muscles grow! Holly, my wonderful friend of forever. You are amazing...and smokin' hot...gonna just get hotter!!! I'm so glad that we can be fitness buddies - even though we're in totally different states! We got this! Amber, so proud of you for what you've already done! Every time I see your before/after photo, I get a little more inspired. I'm looking forward to both of us getting more and more fit! Heather, you are super-Mom! You have the cleanest house, the sweetest & most well behaved kids, and always have time to work out! You're always ready to cheer us on, and you motivate us by just being you! And all the other gals on Facebook, even the ones I'm just getting to know: Keep up the great work! We're going to be able to do so much more for the LORD when we're feeling better, stronger and happier!!!

I'm starting a 12 week training program on Monday: Jamie Eason's LiveFit Trainer  I am excited, nervous and overwhelmed at the thought of it! But we got this! :) I will try to post updates on my progress along the way, as well as some pictures! I need to take my "BEFORE" pictures, weights and measurements...I'll post them too, even though I'm not going to be really "excited" about that! Wish me luck!

EDIT: It sure is hard to write what I'm really feeling with twins asking for this, that or the other...I just realized I left out my wonderful Hubby! He is so supportive of my goals, and even though he thinks I'm beautiful just the way I am, he is thankful that I want to be healthy. If it makes me happy, he's happy. He doesn't mind getting Seth back to sleep when he wakes up at 4:00, as I'm getting ready to leave. He doesn't mind when I kiss him good bye all stinky and sweaty when he leaves for work. He doesn't mind giving up his early morning cuddles with me, for me to go to the gym. He doesn't mind it when I'm falling asleep on the couch at 8:30 because I didn't get to take a nap that day. (as a matter of fact, he takes those opportunities to tease me...all in good fun!) He's great! I'm so thankful for him!

Tasty Tuesday

Pudding Cake

1 stick butter
1 c. flour
1 c. chopped pecans
8 oz cream cheese
1 c. powdered sugar
9 oz cool whip
4 1/2 oz chocolate instant pudding mix
3 3/4 oz vanilla instant pudding
2 c. cold milk

Layer 1
Combine and press into 9x13" dish: butter, flour & nuts. Bake 350* 20 minutes

Layer 2
Blend: cream cheese, powdered sugar & 1 cup cool whip (save rest for topping)

Layer 3
Mix puddings and milk until well blended

Layer 4
Top with remaining cool whip

Chill several hours, or overnight.

Tasty Tuesday

Lasagna

Brown:
1 1/2 lb hamburger
salt & pepper
garlic salt
1/2 small onion, chopped

Boil 1/2 package lasagna noodles in salt water, 10-12 minutes. Rinse with cold water.

Mix:
1 lg. carton cottage cheese
3 T. Parsley
1 c. grated cheese

Add to meat:
1 can tomato sauce
1 can water
1 can tomato paste
1 can water
1 pkg dry spaghetti sauce mix

Simmer 15 minutes. Layer in 9x13" pan: noodles, meat mixture, cheese mixture. Sprinkle with parmesan.

Bake 350* until well heated.
