Tasty Tuesday

Smothered Chicken Enchilada's

8 oz. Sour Cream
2 cans Cream of Chicken Soup
1 Chicken, boiled, de-boned & shredded
2 packages Taco Seasoning
Corn Tortillas
Cheese, of your choice

Cook chicken in taco seasoning as directed. Roll into corn tortillas and place in 13x9" baking dish. Mix sour cream & soup. Pour over top. Spread cheese over top. Bake 350 degrees 45 minutes, or until hot.

Enjoy! This is one of our favorite meals! Add green chilies to the sour cream/soup mix, if desired.

When you have kids, you never know who might "drop by" for breakfast every day. This morning we had Zoe the dog and Larry the Cucumber join us!

Funny side story to Zoe the dog...Samuel has a dog named Zoe. Meredith and Seth LOVE her. She is so good with the kids and seems to LOVE them too! Right after the twins birthday a few weeks ago, my Mom, sister and I took them shopping. Meredith saw that stuffed animal in Target and went crazy over it! She walked all over target holding Zoe to the ground saying "Zoe walkin'!" Nana decided she needed to bring Zoe home with her so she bought it for her. Nearly every morning after she gets up, Meredith has to say "Morning Zoe Grace!" I'm so glad that my Mom decided to buy that for her because it is definitely a favorite toy around here! (I don't usually buy stuffed animals since we have a WAGON-FULL in their room)

No Pain, No Gain

Will called me from work a week or so ago and asked me if I would like to run a half marathon (13.1 miles). After talking through some of the details (How are we going to train with twin 2 year olds?!), we decided to go for it! Monday was the first day of pre-training. Will, Sean and I went running while Natalie kept the twins. It was rough, but we all walked/jogged the full mile without too much pain. I wasn't able to keep up the jogging pace for the full time, but if I wasn't jogging, I kept a brisk pace. When we got home from the track, Will and Sean were already getting sore. I have to admit, I gave Will a hard time. He just turned 30 back in June...so being *old* might have been mentioned. :-) Yesterday, I was in good shape and looking forward to jogging. Will said he was sore all day. I went jogging before Sean came to jog with Will. As soon as I started jogging, my shins and calves were aching. I didn't realize I was sore until I started jogging. I barely made the full mile, and had to walk some of it again, although I don't think my pace was quite as good as Monday. Last night, I could barely move. Will and I got some good laughs at our expense. We were walking a little slumped over and it hurt to lift our legs, so it was more of a shuffle-walk. We looked like a couple of *old* people! :-) Today, I am feeling some better. Last night I slept very soundly, so I am a bit stiff and sore this morning, but I can walk mostly normal today. I have to admit, I am dreading jogging tonight...but no pain, no gain, right?

In other news, here are a couple of photos from the last couple of days. One, to go with Monday's post, is a photo of Meredith helping with laundry. You can't tell from the photo (it was taken with my phone), but she is wearing a night gown and rubber boots. The twins are really into their own fashion. When we are at home, I let them pretty much wear whatever they want. The other photo is what I found in my living room yesterday afternoon. I never know what I'm going to find when I leave a room and come back. This time, they had gathered up a bunch of their stuffed animals and lined them up on the couch. Then Meredith asked "Tales?" I think the toys were getting ready to watch T.V.!

Seth got to have Nanny all to himself for a while yesterday. Meredith and I went to David's Bridal to get her dress fitted for alterations for Lindsay & Samuel's wedding. Nanny said he played with one toy for about an hour! He's such a good kid! Nanny got his suit pants hemmed for the wedding. So before Meredith and I left, we tried it on. He's not a huge fan of the suit, but he looks super handsome in it! I hope he will leave the suit alone during the wedding!!! Meredith did great during her fitting. As long as I was holding her hands for security, she was perfectly still. She loves her flower girl dress, so would occasionally look in the mirror and giggle at herself. After I changed her back into her regular clothes, gave her dress to the alterations lady, and was finishing my business, Meredith had a blast running around the stage and looking at herself in all the mirrors. It was so cute!!! I'm looking forward to next Tuesday when we get to go back and pick up her dress. She loves to dance around in her dress, and I love any excuse to see her in it!

Chicken Cheese Ball

1 large can white chicken
2 (8 ounce) cream cheese, softened
2 Tablespoons Accent
2 Tablespoons Worcestershire
3 Tablespoons Minced Onion

Mix together and cover with chopped pecans or bacon bits. Enjoy!

First Time Blogger

Well, I guess I'm going to give in to the whole blogging thing. We'll see how it goes! I've never been very good at keeping a journal, so you might not hear from me very often! But I figure that it's a great way to keep everyone up to date on the things we do - especially my kids!

The twins turned 2 about 3 weeks ago. They are at such a fun (and exhausting!) age. The great thing about twins is they have a built in playmate. Sometimes I just have to stop to watch them play together. They get along so well (most of the time). Every night before bed, they have to give each other a hug and a kiss and say "Wuv You!" It just melts this Momma's heart!

They LOVE Veggie Tales right now. It's so cute! They both dance and sing along with them. They love "Yarry" (Larry) and "Dundior" (Junior) most especially. They can sing a few words to a couple of the songs. Their favorites are "The Hairbrush Song" and "Cheeseburger"

Meredith is learning to do laundry now, she loves for me to dump clothes by the washer and she will put them in the washer. She occasionly needs help with a few of the larger clothes, but tries so hard to get it done herself. She is so good at helping pick up toys, especially if she knows we're going "bye-bye". She loves to go outside and to go visit people. She is always surprising us with something new she says. A few days ago, I dumped out blocks for the kids to play with and she started jumping up and down saying "OH BOY! Whoo Hoo!" When anyone laughs she likes to laugh and say "That's funny!"

Seth is a happy little man who is so content to play by himself. If he's not playing by himself, he follows Meredith around and gets into whatever she does. He's such a good natured child too. Meredith can take a toy away from him and he just moves on to something else (occasionally he'll stand up for himself if he REALLY wants a certain toy!) He's a little snuggle-bunny too. He gives the best sugars and cuddly hugs.
