Tasty Tuesday

Oriental Slaw
1/2 Head Cabbage, Shredded
3 Green Onions, Sliced
1/2 cup Sliced Almonds
2 T. Sesame Seeds
1 pkg. Chicken Flavored Ramen Noodles, Crushed (save the soup mix)

Put cabbage and onion in large bowl. Put almonds, sesame seeds & noodles on cookie sheet. Bake 350* until lightly brown. Add to cabbage mixture. Pour dressing on when ready to serve.

Dressing
2 T. Sugar
3 T. Terragon Vinegar
1/3 cup Oil
1/2 t. Pepper
1/2 t. Salt
1/2 t. Accent
1 pkg. Ramen Soup Mix

Put in a container with lid, shake well.

Changes

Will and I started doing Dave Ramsey's Financial Peace University last night along with his parents, sisters and their families. We are really excited about it. We did the first lesson, then came home and made a plan to do our first baby step. We have to save up $1,000 for an emergency fund. We are cutting as much out of our life style as we can to get out of debt as soon as possible. We have been married for 6 years, and we've always had some sort of debt or another. I'm tired of it! Anyway, we decided last night that we are going to shut off our internet and Netflix, as well as a few other things. So you probably won't be hearing from me as often (not that you did a lot anyway). We will keep our phones, which we can get internet on, so I will be able to occasionally blog. Please keep us in your prayers as we begin this journey and as we fight to get debt free!!!

Tasty Tuesday

Loaded Potato Soup

12 Red Potatoes
3 cans Cheddar Cheese Soup
3 cans Milk
Green Onions
Bacon Bits
Grated Cheddar Cheese

Cut potatoes into bite sized pieces, boil until tender. Drain. Mix soup and milk and heat slowly so not to curdle. When it's warm, add the potatoes and simmer for 10 minutes. Garnish with the onions, bacon bits and cheddar cheese.

Super easy and yummy dish! Enjoy! I fixed this for dinner tonight and Meredith LOVED it. She kept saying "It's Yummy!"

Sickness

We have had quite a bit of sickness in our household over the last week. I've had a terrible cold, complete with migraines and nausea. Seth decided to follow my lead and get a cold too. Poor kid has felt terrible. He started out with a cough, fever and runny nose. I thought he was getting better yesterday, he acted like he felt better, wasn't running fever, and was just more active. We had Will's parents, sisters and their families over last night for a study. After Larry & Vickie and Richard & April left, Amy and I looked at Seth and saw that his breathing just didn't look right. So we picked him up and listened to his chest. He sounded terrible. He was wheezing very badly! So I decided to take him to the ER. Amy offered to go with me so that Will could stay home with Meredith and so I wouldn't have to drive to LR by myself late at night! Children's Hospital was wonderful!!! The waiting room was SUPER full. There were very few seats open. But since Seth was wheezing, they got him right back. We were in our own little curtained room in no time. About 57 people (ha) came in to listen to him breathe, all of them felt so sorry for him - he sounded TERRIBLE!!! After a breathing treatment with a super cool dinosaur mask, a dose of steroids, a chest x-ray, teaching Momma how to use an inhaler for him, and Momma and Aunt Amy getting a little delirious, we headed home. Diagnosis: Wheezing! lol So, for the next 4 days he is on a steroid and an inhaler.

He seems a lot better today. He's still coughing, but isn't wheezing!!! Seems that the medicine is doing it's job and making him all better. I'm so glad!

Will is fantastic. He got up to get ready for work, and went to the pharmacy to get Seth's medicine. Seth screamed for his Daddy the whole time. I was so exhausted that I felt like I was going to pass out. I hadn't slept in about 4 nights because of us being sick. While Will was at the pharmacy, he called work and explained what's been going on. He got today off! So he came home and took care of the kids so I could go back to bed. I slept until almost noon!!! He fed the kids lunch and put them down for a nap. I got up around then, and he is napping now. He's exhausted too.

This and That!

Not much exciting has been going on in our household lately! Potty training has been the highlight of the last month. Meredith is doing pretty good with it, if I make her sit on the potty chair. She doesn't want to stop playing long enough to go...she'd still just as soon go in her panties. But she always gets so excited when she does go potty in the potty chair.

We've been working with Seth and Meredith on learning to pray, memorizing a verse, and singing a few songs. They love it! At dinner time, Will will get them to repeat the prayer after him. Now, we'll all hold hands in a circle and Meredith usually says "Say God!" They are learning Ephesians 6:1-3 right now. They can both say "Children obey your parents" without much help. After that, they do really good repeating after us. They love to sing songs, and Meredith knows just about every word to "Jesus Loves Me". We are also working on "This Is The Day".

Our good friends had a baby last Saturday! He's a super handsome little chunky monkey! His name is Aiden, and he weighed in at 9 lbs 5 oz!!!! I am going to keep him when his Momma goes back to work. I am looking forward to spending 2 or 3 days a week with that sweet angel! Meredith is already in love with him! We were getting ready to leave the other day and she said "Go see Aiden?"

We went shopping the other day, and I snapped the following picture with my cell phone. It's not the greatest quality picture, but I love it! The twins LOVE to go to Wal-Mart, and they LOVE to help push the cart. We get lots of looks and giggles from people when we are in Wal-Mart. I mean, how cute is that!!! :)

Here are a few pictures from church. A couple of weeks ago, some good friends of ours from Texas were in for a visit. We had 5 two year olds at church that day! So Amber took a few pictures of them!

Today for lunch, I made grilled cheese and tomato soup. I've never met a 2 year old who likes tomato soup...until my daughter! She LOVES it!

Other than that, we had a random trip to my parents house a couple of weeks ago. Will had to go up that way for work, so we left Monday night and came home Tuesday afternoon. It was fast and crazy, but lots of fun! I enjoyed getting to spend a little time with my parents, sister, and brother-in-law. I got to go see my sister's house now that she lives out there. She's working very hard making it into a beautiful home! I'm so proud of her! :)

We've had a couple of family game nights with Will's family. "The Game of Things" is a hilariously fun game that will have you rolling. We will have to do it again soon!

Still no showings on our house. I'm trying to be patient and know that God is in control. I'm just getting tired of living in "limbo".

Tasty Tuesday...late again!

Chicken Casserole

6 boneless, skinless Chicken Breasts, cut into bite sized pieces
6 slices Swiss CheesePlace
1 can Cream of Chicken Soup, diluted with 1/2 cup milk
1 3/4 cup Chicken Stuffing

Place chicken in a greased 9x13" casserole dish. Place cheese on top.* Spread soup mixture over chicken and cheese. Sprinkle stuffing on top. Cover with foil.

Bake 350* 45 minutes, remove foil and cook 15 minutes longer.

*Broccoli Spears may be added.

This is such a yummy and easy dish. We eat it pretty often. I love to have cranberry sauce with it! YUM!

Tasty Tuesday (again, a day late)

We were out of town yesterday. Will had to go out of town for his job, it just so happened to be really close to where my parents, sister & brother-in-law live. So we went up Monday evening and spent the night with them. The twins and I spent the day with my Mom yesterday, while Will worked. Then we met him to come home. So I wasn't really on the computer yesterday. So here's the recipe I was going to post. :) It's a super easy casserole, that always goes over really well. I have taken it to potluck several times, and I don't usually come home with much, if any, left. It's also really good leftover. :)

Chicken Cordon Bleu Casserole

1-1 1/2 lbs. boneless, skinless chicken breasts, diced
8 slices Swiss cheese, torn up
8 ounces Ham sandwich meat, diced
1 bag Croutons, crushed (I think it's best with the Cheesy Garlic flavored ones!)
1 stick butter, melted

Mix up. Place in 9x13" dish. Bake 350 degrees, 45 minutes.

Tennessee Volunteers

My Dad is a huge Tennessee Volunteers fan. He almost always wears something with the logo or that's orange. I've never really said anything about it to the kids, but it's amazing at how they pick up on things like that. This morning, I dressed Seth in a Vols outfit. Then he looked down and said "PAPA!!!"
