Tasty Tuesday

Chicken Parmesan

4 chicken breasts
1 egg, lightly beaten
1/2 c. Italian breadcrumbs
2 T. butter, melted
1 3/4 c. spaghetti sauce
1/2 c. mozzarella cheese
1 T. grated parmesan
1/4 c. parsley
1 pkg. thin spaghetti noodles

Flatten chicken into 1/4" thickness with meat mallet. Dip chicken in egg, then bread crumbs. Cook in butter in electric skillet over medium-high heat until brown on both sized. Spoon spaghetti sauce over chicken. Bring to a boil Cover. Reduce heat & simmer 10 minutes. Sprinkle with cheese & parsley. Cover & simmer until cheese melts. Serve over noodles, cooked according to package.

Lime Pie

Cool Whip
Sweetened Condensed Milk
1/2 c. lime juice
Graham cracker Crust

Mix cool whip, milk & juice together. Pour into crust. Refrigerate.

Tasty Tuesday

Smothered Chicken Enchilada's

8 oz. sour cream
2 cans cream of chicken soup
1 chicken, boiled, deboned & shredded
1-2 pkg. taco seasoning
corn tortillas
cheese (your choice)

Cook chicken in taco seasoning, as directed. Roll into corn tortillas and place in 9x13" dish. Mix sour cream & soup. Pour over top. Spread cheese over top. Bake 350* 45 minutes or until hot.

Chocolate Chip Cheeseball

8 oz. cream cheese, softened
1/2 c. butter, softened
1/4 t. vanilla
3/4 c. powdered sugar
2 T. brown sugar
3/4 c. mini chocolate chips
3/4 c. pecans, finely chopped

Beat cream cheese, butter & vanilla until fluffy. Gradually add sugars. Beat just until combined. Stir in choclate chips. Cover & refrigerate 2 hours.  Place on large piece plastic wrap, shape into ball. Refrigerate 1 hour. Roll into pecans when serving. Serve with Graham Crackers.

Cheesy Chicken

2 (12.5 oz) cans chicken
2 (8 oz) crescent rolls
2 cans cream of chicken soup
2 c. milk
1 c. grated cheddar cheese
1 can green chilies (opt, I usually leave them out, but my mom always put them in when I was growing up)

Separate crescents. Place chicken on each. Roll up. Place in 9x13" dish. Bake 375* 15 minutes, or until browned. Meanwhile, mix remaining ingredients (1/2 the cheese). Pour over crescents. Put remaining cheese on top. Bake 20-25 minutes longer, until hot.
