Today's post is made with a lot of emotion. A dear woman that I have known my whole life passed away last night. She was a precious lady, and will be greatly missed by many. Kenneth and Sue used to live in the same town as me, but moved a couple of years ago to be closer to their kids. While they still lived here, I once made a large pot of stew and some cornbread to take to them. Oddly enough, that's what I planned for dinner tonight. As I was putting my stew on to simmer, I was remembering times with Kenneth and Sue. When I made that stew for them, they gave me the best compliment I've ever recieved. They said my stew tasted very similar to my great-grandmother's. Grandma was a wonderful cook, so to even have them compare my stew to hers was a major compliment! So that's the recipe I am going to share with you today. It's quite simple, and you can change it to your liking. :)
Stew
2-3 lbs of stew meat, browned and seasoned with Meat Tenderizer, Garlic Powder & Minced Onion
2 cans each:
Green Beans
Peas
Diced Potatoes
Sliced Carrots
Whole Kernel Corn
Tomato Sauce
Tomato Paste
Drain 1 can each of green beans, peas, potatoes, carrots & corn. Mix all together and let simmer all day. The longer it can simmer, the better it is! Will and I aren't big fans of chunks of tomatoes, but if you'd rather have diced tomatoes instead of tomato sauce, you can! Add any other veggies or seasonings you want. Enjoy!
